Ingredients :

300g all-purpose flour
50g sugar
15g baking powder
2g salt
1/2 finely grated lemon zest
115g cool unsalted butter, cut or grated into small pieces
125ml whipping cream
60ml milk
1 large egg
5ml vanilla extract
80g fresh or frozen peaches
80g pecan chopped into small pieces

For the glaze:

130g icing sugar
25ml lemon juice

Preparation👇

  1. Preheat the oven to 375 F and lay a baking tray with parchment paper.
  2. Mix the dry ingredients: combine flour, baking powder, sugar, and salt in a large bowl.
  3. Cut in the butter: using a pastry cutter or your fingertips, blend the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Add wet ingredients: in a separate bowl, whisk the whipping cream, milk, egg, and vanilla together. Add this to the flour mixture and stir gently with a fork to bring the dough together.
  5. Fold in peaches and pecans: gently mix in the chopped peaches and toasted pecans, being careful not to overwork the dough.
  6. Shape the dough: turn the dough out onto a floured surface, gently patting it into a circle about 1 inch thick. Cut into 8 wedges and place them in a baking tray, leaving a few inches between them.Keep the scones in the freezer for at least 20 minutes before baking.

  7. Bake to perfection: brush with a little extra milk and bake for 20 - 25 minutes until the scones are golden brown and fragrant. Cool completely before glazing.
  8. Glaze : whisk the icing sugar and lemon juice together and drizzle over the scones using the whisk or a spoon. Let the glaze set for an hour before serving.
